The Shea

Originally from Sudan, Shea (Vitellaria paradoxa) grows in woodlands and plateaus of western Africa (from Mali to Nigeria); robust appearance, is a stocky tree whose height takes different forms depending on the regions and species.
Its height can reach up to 20 meters and the fruit production begins around 25 years, but for optimum performance it takes 45-50 years. His lifetime is about three hundred years.
In some regions the tree is sacred and protected. The production period runs from July to September but may vary by region.
The tree grows only in the wild, it is almost impossible to replant the tree itself but studies are made to practice grafting.
The fruits are round and have a tasty pulp it contains the fine almond what women use to produce the butter. The average production per tree is 15 to 20 kg of Shea fruit.
It takes more than 3kg of dried nuts to produce 1 kg of butter.
The Shea tree is the most common species on the Mossi plateau, all the tree elements are used by the people.

Just a few years ago the world discovered the Shea. Now it created a real keen interest.(cosmetic, food process ect)

Trees are initially listed and classified by zone. This ensures that the area is 100% free of chemicals.
The work is divided in groups: collectors and processors
It is important to cook the nuts quickly after harvest in order to have almonds with low acidity levels because you’ll find it in the butter at the end of the process.
Dried and sorted almonds are stored in a ventilated and dry place (Voûte Nubienne) to preserve quality.

Steps of extraction:

Collect Shea fruit on and around the trees
Remove the seed from the pulp
Cooking nuts
Drying and shelling the nuts
Drying nuts
Crushing
Roasting nuts
Grinding nuts to the mill ( the only mechanical process !)
Shea paste churning (the most challenging step for women) followed numerous rinses
Baking the paste
Decanting and filtering
After a final filtration, obtaining a butter 100% pure and natural!!!
We do not refine our butter.

Virtues of Shea butter

The virtues are many, Shea butter is composed of saturated and unsaturated fatty acids, nonsaponifiable and vitamins A , D, E , F.
It protects, repairs and nourishes the skin and scalp. It has a wound healing action and slows the aging of the skin. Also used by athletes to massage the muscles after exercise.

Almonds are sold per 100 kg bag.

Annual butter potential 20 T and  100 T of dry nuts.

Our butter is suitable for food, cosmetics and pharmaceutical purposes.

 

 

Bissap

The Bissap (Hibiscus sabdariffa) also called Karkadé in Egypt
The plant is massively grown on the Mossi plateau, both for its leaves as for its flowers. There are white, pink and red hibiscuses.
The white and pink are used mainly for cooking and the red as hot or cold drink.
The Bissap virtues are many: antioxidant, diuretic, tonic and anti-inflammatory. It is also rich in vitamins. 
The hibiscus is used as well in food process as a natural dye.

Our Bissap is available in the following forms:

Groundnut

Arachide

Peanut was always cultivated on the Mossi plateau; this cereal is commonly used in the Burkinabe's kitchen. We grow and transform our peanuts naturally without any chemical input. 
we are self-sufficient in seeds.
At harvest we remove leafs from the shells, then we dry the peanut in open air. The storage is done with the shell in our “Voûte Nubienne” storage house.
Our peanuts are sold in shell, shelled with or without the skin.
The paste is obtained through a mill with a grindstone.
The oil is extracted manually.

Our groundnut selection:

Sesame

Sesame (Sesamum indicum) is a cereal increasingly widespread in sub-Saharan Africa due to its undemanding culture fertile soil and relatively inexpensive. Our sesame is produced without pesticides or insecticides, it gives low yields but our quality is great! At harvest the sesame plant is first dried whole then you must shake plants so that the seeds fall. The seeds are then washed and pounded numerous times to get a pure white sesame.The next step is roasting. The oil extraction is done manually from the paste obtained after the milling process. Sesame virtues are many: it is anti oxidant, anti toxic, rich in omega 6, lowers bad cholesterol (LDL) and it’s very rich in vitamins. Our paste are 100 % sesame

Our sesame selection:

  • 330 gr jar of sesame paste.
  • 1/2 L bottle of sesame oil (available also in 5L and 20 L drum)
 

 

Onion

Because the culture of the onion (violet of Galmi) is done during the dry season, the production is decentralized about 20 km away from our village Guillé beside a water reservoir ( artificial lake) .This is the only culture where we use chemical fertilizer but we work in a rational way ie minimal use of chemical products. The majority of our production is sold fresh after 6-8 months of storage at home in the village. (The Violet of Galmi can be kept for more than 12 months). A small portion of the crop is dried in the sun then roasted, we use it as a spice on its own or mix with soumbala.

Soumbala

Soumbala Tamneere

 

Soumbala is a spice made of Néré seeds, it is a good substitute for " Maggi cube " because it is 100% natural. With a quite strong odour, it will flavour your soups and other great dishes with fish. The Soumbala regulates blood pressure. 

 


 

Okra

Okra is a plant that gives green vegetables conical shape, it is eaten fresh during the raining season then it is dried to be consume the rest of the year. It is present in most of the local dishes. We grow okra like our other products without chemicals, usually it is grown in multi-culture with bissap, peanuts ect. It gives a lot of fibers and reduce the cholesterol.
